Easy and kid-friendly 3 step recipe for slow roasted grape tomatoes in the oven. Great as a side dish or to add to crostini, pasta salad, even grilled cheese!
Ingredients
  • 3 pints grape tomatoes
  • 1 tablespoon olive oil
  • 1 teaspoon salt
Instructions
  1. Spread 3 pints of clean grape tomatoes out onto a large rimmed baking pan.
  2. Toss with 1 tablespoon olive oil and 1 teaspoon of salt.
  3. Bake at 300 degrees for at least 1 hour. Check on the tomatoes then because you might opt to go another 15 minutes longer. Slow roasted grape tomatoes should look wrinkled without being burnt or deflated. Store in an airtight container for up to 7 days in the refrigerator. This makes about 4 cups total after they’ve roasted down.
