Caramelized Onion and Brie Crostini

Sweet and savory appetizer - caramelized onion and brie crostini make planning party food easy! Step by step recipe great for the holidays or hangout.
  • 2 large onions
  • ½ cup amaretto
  • 1 tablespoon canola oil
  • salt to taste
  • 8 oz. brie cheese
  • 1 french baguette
  • 1 tablespoon olive oil
  1. TO CARAMELIZE ONIONS, grab 2 large onions and slice into long strips and toss into hot skillet with canola oil. Let onions brown for 5 minutes on medium high heat then deglaze with amaretto (or whiskey). Turn heat to low and stir every 5 minutes for 15 minutes. Remove from heat and set aside.
  2. TO MAKE CROSTINI, preheat oven to 500 degrees. Cut up french baguette into ⅓ to ½ inch thick slices. Lay out on a rimmed baking pan and brush lightly with olive oil. Bake for 3-5 minutes until just golden. Remove them from the oven and set aside, keeping the crostini on the pan.
  3. TO ASSEMBLE, cut brie into little squares to lay on top of crostini. Spoon caramlized onions on top of each piece. Broil crostini on high for 1-3 minutes until brie starts to melt. Remove from oven and immediately transfer to platter to serve.
